my new favorite cookie, adapted from the staple oatmeal cookie recipe on the lid of the Quaker Oatmeal Box.
Recipe:
1 1/4 sticks butter, softened
1/2 C. brown sugar, firmly packed
1/4 C. granulated sugar
2 eggs
1 tsp. vanilla
1 1/2 C. all-purpose flour
1 tsp. baking soda
1 1/2 tsp. cinnamon
pinch salt
3 C. oats
1 C. cranberries, fresh and chopped
1. Heat oven to 350 F. In a large bowl, beat butter and sugars until creamy and fluffy.
2. Add eggs and vanilla. Beat well.
3. Add combined flour, baking soda, cinnamon and salt. Mix well.
4. Add oats and cranberries. Mix well.
5. Drop dough by rounded tablespoons onto ungreased cookie sheets.
6. Bake 8-10 minutes or until light golden brown.
7. Cool one minute on sheet, remove to wire rack.
